If you like soup, and want to keep things healthy and light on calories, this is a good option on a weeknight when you don’t have a lot of time. This recipe uses products from Trader Joe’s that are inexpensive and convenient. Probably best served in the fall, winter, spring months, but we love soup so we make it in the summer as well. Make sure you have the fan handy or the A/C on.

Serves: 2, ~400 calories per serving

Total Time: < 15 minutes

Ingredients:

Trader Joe’s pureed soup in the tetra boxes (~$2.79)

Trader Joe’s chunk chicken in a can (~$2.50)

Your choice of veggies (spinach, carrots, celery, etc.) or potatoes

salt, pepper, cayenne (optional)

Instructions:

Open canned chicken and put in saucepan

Open soup box and pour all of it in

Add veggies. For carrots, celery, potatoes, it’ll take a little longer to cook. For spinach, you can add that in at the end.

Add salt, pepper, and cayenne or crushed red pepper flakes to taste or for that extra kick.
